Pav Bhaji, also known as Bombay Mix, is a spicy vegetable dish. It consists of mixed vegetables cooked in a spiced butter tomato sauce and served with pav (bread). Pav bhaji was invented as a lunchtime dish for textile mill workers in Mumbai and became popular in the 1960s when it was introduced at restaurants near railway stations in Mumbai. The dish is now available throughout India and internationally. The word "pav" refers to bread rolls which are deep fried and eaten with the bhaji mixture as an accompaniment to rice or other dishes like dal (lentils) or chapatis (flatbread). The word "bhaji" means vegetables and it can be interpreted as "mixed vegetables" This is made from mixed vegetables simmered in hot butter and tomato sauce seasoned with various spices, including cumin seeds, coriander powder and red chili pepper flakes. The dish may also include ground masala (a spice blend), onions and garlic. Pav Bhaji can be served as an appetizer before dinner or as a side dish to rice.
